On weekend mornings, one of the most luxurious things I do for my daughter and I, is to stroll around the neighborhood, lolly gagging at the trees, the flowers, the sky and whatever else catches our eyes. I truly look forward to it (along with our “Elsa” and “Anna” piano lessons), knowing the fresh air, mental break, and exhilarating exercise is what keeps me happy, balanced, and more apt to laughter. During Halloween, we’d make it a point to find the best decorations, (we were very lucky because there were LOTS of wonderfully festive houses) and make it an event- talking about the skeletons, the werewolves, and (oh!) the pumpkins! So many pumpkins! Christmas, is no exception.


Over the last few weeks, we’ve seen houses transform from the ghoulish, to Christmas lights partially strewn, to fully decorated for the holiday season. Greens, reds, whites, blues, and gold- we’re happy to see it all. We decided ourselves, to put up the tree and the trimmings the weekend before Thanksgiving, not unlike many others, to give our holiday an extra homey feel. This weekend, feels complete not only in our house, but in our neighborhood: wreaths festooning doorways, garlands draped over balustrades, peppermint candy canes festooned over driveways, and our favorites… seeing reindeers, snowmen, North Pole penguins, and Santa glittering in the night, raining goodwill and cheer on a holiday season where we could all use some warm hugs.


Here’s a Peanut Butter Peppermint cookie recipe that you can do in one bowl, in order to free up and luxuriate in some well-deserved time, so you can do what we do- lolly gag around the neighborhood, wrapped in the safety and comfort of knowing that no matter what comes your way, love, happiness, and joy are around the corner if you choose to find it. Peanut Butter Peppermint Cookies

(Makes 10 cookies)


Ingredients

1 cup smooth peanut butter

1 cup sugar

1 large egg

1 teaspoon peppermint extract 5 mint chocolate sandwich candies, halved


Directions

1. Preheat the oven to 350°F. Line 2 baking sheets with parchment paper or silicone baking mats.

2. Using an electric mixer, beat the peanut butter, sugar, egg, and extract in a medium bowl until smooth.

3. Drop about 2 Tablespoons of the dough onto the prepared baking sheets and press down gently to flatten. Then, with a fork, press the center in a criss-cross pattern, dipping the fork in water in between each cookie to moisten.

4. Place a candy half in the middle. Repeat with the remaining dough and candies.

5. Bake until slightly golden around the edges, rotating the baking sheets from top to bottom and front to back halfway through, 18–20 minutes. Let cool on the baking sheets about 10 minutes, and then transfer to wire racks to cool completely. Enjoy!
