Hi everyone! Long time, no post! Like everyone, I needed to reset and decided to take a break and reevaluate what makes me happy. Luckily, even in the midst of being a working mom, I realized how much I missed and enjoyed taking photos and cooking. I hope my funny stories and pictures bring as much joy to you as much I enjoy creating them. I’m glad to get in the swing of things and hope you’ve been able to keep laughing at life!
Today is her first day back to school after a short summer vacation. I love the start of school and my daughter definitely shares the same enthusiasm. I must say, like most parents, it’s a mixture of happiness, some confusion, anxiety, and determination. I love seeing all of her friends and the parents. It’s always a joy chit chatting and catching up. The confusion and anxiety begins when you’re not sure what’s expected of you, your child, or how your child will mesh with the new environment. Luckily, our school, teachers, and volunteer parents are great communicators. (It’s just like life!). For me, the payoff is seeing my kid and her peers grow, knowing you’re trying to do the best you can for your kid, family, and hopefully, your community. (Idealistic, much? I most definitely am.)
Every parent, aunty, and uncle, nowadays has learned to put on many different hats. From family caretaker, working parent, the list is endless, I hope this blog gives you some laughter, joy, and everything in between. Regardless, I hope it gives you a quick respite in your beautiful life. In honor of the school year and the rhythm of the morning rush, here’s a Dragonfruit Chia Seed Pudding in honor of my daughter. The love of my life, I enjoy watching her grow, learn new things, and revel in her independence when she masters a new skill. Happy back to school!

Dragonfruit Chia Pudding
Ingredients
1 cup almond milk, coconut milk or a combination (I used coconut milk because that’s what I had on hand.)
1/4 cup chia seeds
2 Tbsp Pure Maple Syrup
1 frozen package dragonfruit
1 tsp vanilla extract
Whatever fruit you have on hand to top
Directions
In a covered container, stir together the coconut milk (almond milk or combination), chia seeds, maple syrup, dragonfruit packet and vanilla. Cover and refrigerate for at least 4 hours or up to overnight.
Stir the chia mixture and let stand at room temperature until the seeds are plumped, about 10 minutes. Divide the mixture among 4 serving bowls and arrange your choice of fruit. Drizzle with more honey if desired.
